Easy-Peasy Strawberry shortcake in a cup

Last friday I wanted to create a last minute dessert for my husband after a long week of work and this is simply one of those easy last minute desserts to whip out. During my student days, my cousin once showed me a recipe (if you would call it) for a quick dessert in seconds; cut strawberries + dollop of strawberry jam+ whipping cream (from a can) in a cup= a strawberry and cream/ice cream taste. It tasted yummy. I quick fix for a dessert craving in the middle of the night. :P

So with that as my inspiration and jumping off point. Here is my version. A similar posh-er version from my student days.

Oh, fyi, of course my husband enjoyed every single mouthful of it. :)

You would need:

1. sponge cake baked in muffin tins (easy to fit in the cups)

-I used genoise sponge here (which is firmer than regular sponge cake)

2. Whipped Chantilly cream- (cream + teaspoon of caster sugar & whipped)

-be careful not to over whip the whipping cream or it would spilt. There’s no way to rescue it after that.

-I recommend whipping it by hand if it’s a small batch

3. strawberries-sliced

4. strawberry jam

 

Step 1:

After the sponge cake has cooled down, slice it mini cake into thirds. Like so.

Step 2: Place one of the slice sponge cake into a cup, followed by a dollop of strawberry jam and sliced strawberries.

Step 3: Top with whipped cream and repeat again with sponge cake, jam and strawberries.

Step 4: Finally end with the last layer of sponge cake and whipped cream. Topped with a strawberry on top.

Chill for at least an hour and enjoy!
