Cupcake flavors for the christmas season

When you think of the Christmas season & baking the first thing that comes to my mind is always; Gingerbread cookies, chocolate yule log cake.

I have come up with 3 recipes that I want to share with you all that encompass the flavors of Christmas in a cupcake-all using my R Little Cakebox cupcake baking mix. That makes it so easy to bake for Christmas parties.

Chocolate chip & walnut cupcakes with hazelnut chocolate frosting

Ingredients needed:

  • 1 R Little Cakebox Vanilla cupcake mix
  • 1/4 cup semi-sweet chocolate chips
  • 1/4 cup chopped walnuts
  • 150g melted butter
  • 75ml (1/3 cup) milk
  • 75ml (1/3 cup) water
  • 2 large eggs
  • hazelnut chocolate spread (i used nutella)

 

Recipe:

  1. mix melted butter, milk, water, eggs and vanilla cupcake mix and whisk until mixture is smooth with no visible lumps.
  2. add semi-sweet chocolate chips and walnuts into cupcake batter and mix
  3. -for extra decadence you can choose to add 1 tablespoon of hazelnut chocolate spread (i used nutella)
  4. fill cupcake liners with cupcake batter up to 2/3 full and bake for 25-30 mins, or until when a toothpick is inserted it comes out clean with no crumbs.

 

* for extra chocolate-y goodness you can also use R Little Cakebox’s Chocolate cupcake mix

 

Frosting:

  1. follow the vanilla frosting recipe given at the back of the vanilla cupcake mix box
  2. when the vanilla frosting is ready for use, add an additional tablespoon of hazelnut chocolate spread.

 

Adults only: Rum and raisin cupcakes with maple frosting 

 

Ingredients needed:

rum & raisin cupcake

  • 1/3 cup of golden raisins
  • enough rum to just cover the golden raisins
  • 150g melted butter
  • 75ml (1/3 cup) milk
  • 75ml (1/3 cup) water
  • 2 large eggs
  • 2 tablespoons maple syrup

 

Recipe:

  1. soak the raisins in rum overnight
  2. mix melted butter, milk, water, eggs and vanilla cupcake mix and whisk until mixture is smooth with no visible lumps.
  3. add the rum soaked raisins into cupcake batter and mix (do not add any leftover rum liquid into the mix)
  4. fill cupcake liners with cupcake batter up to 2/3 full and bake for 25-30 mins, or until when a toothpick is inserted it comes out clean with no crumbs.

 

Frosting:

  1. follow the vanilla frosting recipe given at the back of the vanilla cupcake mix box
  2. when the vanilla frosting is ready for use, add an additional two tablespoons of maple syrup

Gingerbread cupcake with Cream cheese frosting 

 

Ingredients:

  • 1/2 teaspoon ground ginger
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoon maple syrup
  • 150g melted brown butter
  • 75ml (1/3 cup) milk
  • 75ml (1/3 cup) water
  • 2 large eggs

 

Recipe:

making brown butter:

  1. place 150g of butter in a saucepan and heat on the stove until butter has melted
  2. under medium heat let the melted butter continue cooking until it has turned a light brown colour then immediately take it away from the heat.
  3. the butter will have a nice “caramelized” aroma

 

Gingerbread cupcake:

  1. mix melted brown butter, milk, water, eggs and vanilla cupcake mix and whisk until mixture is smooth with no visible lumps.
  2. add the ground ginger, cinnamon, nutmeg  & maple syrup into cupcake batter and mix
  3. fill cupcake liners with cupcake batter up to 2/3 full and bake for 25-30 mins, or until when a toothpick is inserted it comes out clean with no crumbs.

 

Frosting recipe:

  • 50 grams butter
  • 125 grams (1/2 cup) cream cheese
  • 185 grams (1 2/3 cup) powdered sugar
  • 2 tablespoon maple syrup

  1. using an electric mixer; whip butter and cream cheese at high speed until it is whipped and light.
  2. reduce mixer speed to low and add powdered sugar mix until well combined
  3. add in maple syrup and mix then frosting is ready for use
